TANDOOR
The origin of 'Tandoor' cooking can be traced back to the South Central Russia, when the nomads would dig a pit and roast the whole carcass of lamb. By way of the Silk Road and the invasions from the west this style of cooking was brought to the ancient kingdom of India. Here the art of tandoor cooking was refined and its multi usage perfected as the shape slowly evolved to its present ‘ballooned skirt’ form. The charcoal fired oven reaches up to 600oF and the skilled chef uses the different strata of heat for varied cuts of meat, which are marinated, in yogurt, garlic and other spices before being skewered and grilled. The inner walls of the tandoor are used to bake breads. Even the dying embers are not allowed to go waste and are used to cook lentils, overnight.
